Oh pancakes. Could you ever go wrong with freaking pancakes?! I would usually make a paleo pancake but to be frank, I just haven’t created a recipe where I felt it was absolutely perfect.
Plus, the past few months I have had a different approach when it came to my diet. I had a pretty strict diet where it was paleo based and I would not have anything else besides what would fit into the paleo diet. It is still how I eat for majority of the day but I have a more balanced approach now. I am not going to beat myself up if I have a whole wheat slice of bread or I ate a small piece of birthday cake at a party.

I just got tired of overthinking about food. I naturally go towards eating natural, clean foods, however if I get a craving for something I usually satisfy it. In this case it was pancakes. That is where the goal of creating the best whole wheat pancakes came to exist.
I was not disappointed. I hope you enjoy this quick, simple, and balanced recipe 🙂 Let me know how you like them!
Whole Wheat Pancakes
Ingredients
- 2 cups whole wheat flour
- 4.5 tsp baking powder
- 2 tbsp coconut sugar
- 1/2 tsp salt
- 2 large eggs
- 2 cups milk
- 2 tsp pure vanilla extract
Directions
- Mix all dry ingredients in a mixing bowl.
- Add wet ingredients to the mixing bowl, mix well.
- Heat a skillet on medium heat. Spray oil, or use butter (as I did) to coat and pour about 1/4 to 1/2 of pancake batter.
- When you begin to see bubbles and edges begin to set, flip the pancake.
- Repeat with rest of batter.
- Top with your favorite topping like fresh fruit, coconut flakes, and of course 100% pure maple syrup!
